Smoky Jalapeño Popper Meatloaf with Creamy Ranch Drizzle
Ingredients:
For the Meatloaf:
1 ½ lbs (680g) ground beef
1 cup breadcrumbs (plain or seasoned)
1 egg, beaten
1/2 cup milk
1/2 cup shredded cheddar cheese
4 oz (113g) cream cheese, softened
2 jalapeños, finely diced (seeds removed for milder heat)
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cumin
1/4 cup BBQ sauce (for brushing)
For the Creamy Ranch Drizzle:
1/2 cup sour cream
2 tablespoons ranch dressing
1 tablespoon milk (to thin, if needed)
1/2 teaspoon garlic powder
1/2 teaspoon dried dill
Salt & pepper to taste
Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
Prepare the Meatloaf Mixture:
In a large bowl, combine the ground beef, breadcrumbs, beaten egg, milk, shredded cheddar, diced jalapeños, smoked paprika, garlic powder, onion powder, salt, pepper, and cumin. Mix until well combined but don’t overwork the meat.
Stuff with Cream Cheese:
Divide the meat mixture in half. Shape one half into a rectangle on the baking sheet or press it into the bottom of the loaf pan. Spread the softened cream cheese evenly over the top, leaving about ½ inch from the edges. Place the remaining meat mixture on top and press the edges together to seal the filling inside.
Bake the Meatloaf:
Brush the top with BBQ sauce for extra smokiness. Bake for 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
Make the Creamy Ranch Drizzle:
While the meatloaf bakes, whisk together the sour cream, ranch dressing, garlic powder, dried dill, salt, and pepper in a small bowl. Add a splash of milk if needed for a drizzle-able consistency.
Rest & Serve:
Let the meatloaf rest for 5-10 minutes before slicing. Drizzle with the creamy ranch sauce and garnish with extra diced jalapeños or fresh herbs if desired.
