Garlic Parmesan Chicken Meatloaf
We had initially purchased ground chicken by mistake, but it turned out to be a fortunate accident — and what a happy twist of fate it was! Out of that mix-up came this Garlic Parmesan Chicken Meatloaf — a dish so flavorful, moist, and comforting that it’s now a regular star on our dinner table. With savory garlic, rich Parmesan, and a perfectly crisp exterior, this easy-to-make meatloaf is a lighter take on a classic, without sacrificing any of the cozy goodness. Trust me, one bite and you’ll be glad for every little “oops” in the kitchen!
Ingredients:
1 ½ lbs ground chicken
2/3 cup breadcrumbs (plain or Italian-style)
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1/4 cup onion, finely chopped
1/4 cup milk
1 large egg
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1/2 cup shredded mozzarella cheese (for topping)
Fresh parsley, chopped (for garnish)
Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper for easier removal.
Mix the Meatloaf Base:
In a large bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, onion, milk, egg, Italian seasoning, salt, pepper, and red pepper flakes if using. Mix until just combined—do not overmix.
Shape and Bake:
Transfer the mixture to the prepared loaf pan and shape into a loaf. Bake uncovered for 40–45 minutes, or until the internal temperature reaches 165°F (74°C).
Add the Cheese Topping:
In the last 5 minutes of baking, sprinkle shredded mozzarella on top of the meatloaf. Return to oven and bake until cheese is melted and bubbly.
Rest and Serve:
Remove the meatloaf from the oven and let it rest for 5–10 minutes. Slice and garnish with fresh parsley. Serve with mashed potatoes, roasted vegetables, or a fresh salad.
