Cozy Chicken and Rice Soup

Ingredients:
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
3 medium carrots, sliced
2 celery stalks, sliced
1 teaspoon dried thyme
1 teaspoon dried parsley
1/2 teaspoon black pepper
1/2 teaspoon salt (or to taste)
1 bay leaf
6 cups low-sodium chicken broth
1 cup long-grain white rice, rinsed
2 cups cooked, shredded chicken (rotisserie chicken works great)
Juice of 1/2 lemon (optional, for brightness)
Fresh parsley, chopped (for garnish)
Directions:
Sauté the Vegetables: In a large soup pot, heat olive oil over medium heat. Add the diced onion and cook for 2–3 minutes until softened. Stir in the garlic, carrots, and celery, and cook for another 4–5 minutes until the veggies begin to soften.
Add Herbs and Broth: Stir in thyme, parsley, black pepper, salt, and the bay leaf. Pour in the chicken broth and bring the mixture to a boil.
