Lemon Chicken & Veggie Orzo Stir Fry

Ingredients:

1 cup uncooked orzo pasta
1 pound boneless, skinless chicken breast, cut into bite-sized pieces
2 tablespoons olive oil, divided
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and black pepper, to taste
1 zucchini, chopped
1 red bell pepper, chopped
1 cup broccoli florets
2 cloves garlic, minced
Juice and zest of 1 lemon
2 tablespoons soy sauce (low-sodium preferred)
1 tablespoon fresh parsley, chopped (for garnish)
Optional: Grated Parmesan cheese, for serving
Directions:
Cook the Orzo: Bring a pot of salted water to a boil. Add the orzo and cook according to package directions until al dente. Drain and set aside.
Season and Cook the Chicken: In a medium bowl, toss the chicken pieces with garlic powder, onion powder, salt, and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden and cooked through, about 5-6 minutes. Remove and set aside.
Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped zucchini, red bell pepper, and broccoli. Cook for 4-5 minutes until tender-crisp. Stir in the minced garlic and cook for 1 more minute.
Combine Everything: Return the cooked chicken to the skillet. Add the cooked orzo and toss everything together.
Add Flavor: Stir in the lemon juice, lemon zest, and soy sauce. Toss well to coat all the ingredients evenly. Let everything cook together for another 1-2 minutes so the flavors meld.
