Ingredients:
2 cups cooked, shredded chicken (rotisserie works great)
1 can (15 oz) corn kernels, drained
1/2 cup frozen fire-roasted corn (optional, for extra flavor)
1/2 cup sour cream
1/4 cup mayonnaise
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
Juice of 1 lime
1/4 cup chopped fresh cilantro (plus extra for topping)
1/2 cup crumbled cotija cheese (or feta)
1 cup shredded Monterey Jack or cheddar cheese
Salt and pepper, to taste
1 cup crushed tortilla chips (for topping)
Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.
Mix the Base Ingredients:
In a large mixing bowl, combine the shredded chicken, corn (both canned and fire-roasted, if using), sour cream, mayonnaise, chili powder, cumin, garlic powder, lime juice, cilantro, cotija cheese, and half of the shredded Monterey Jack or cheddar. Season with salt and pepper to taste.
